So all encounter battles have been removed from the game? So it's only trainer and gym leader battles that exist now? So... Basically catching every Pokemon is like the Safari Zone now, just without rocks and bait?

Yes, OP. The gameplay footage we saw at E3 showed it's 1:1 like Pokemon GO, so to catch Pokemon all you do is give them a Berry then lob balls till they chose to be caught. They probably don't even run away.

Diddn't they confirm on the treehouse that in the later part of the game the 'mons jump around more and can run off? We didn't see any of that as all we saw was still in the tutorial part.

Yes they said that later in the game, pokemon start to move around more and become trickier to catch, but they didn't specify fleeing so not sure about that part

Seeing as how it's a GO clone and that there are kids playing GO, I'd say running will be an included mechanic, but also think that any "major" (legendary, story encountered 'mon, similar) event 'mon won't ever flee, like how the research legendaries in GO don't.

As someone who has not never touched Go! but has watched the E3 demo, what's going to happen if you need to level up your Pokemon? How do you grind? I know that you gain EXP from catching Pokemon, but does that mean you just need to catch Pokemon and release them for the sake of leveling up?

Much like Pokemon GO, you're expected to capture every Pokemon you see. So yes, catching Pokemon is how you "grind" even though it's completely unnecessary because of how utterly pathetic Trainers are.
