If GO/LGEP is anything to go by, I think they'll be adding in size differences between individual pokémon in Gen VIII. Besides, seeing oversized/non-standard pokémon in the anime is par for the course (fwiw, I don't think ANY of the Eeveelutions are shown in the anime to proper scale and they're not the only ones).

According to LGPE, pokemon's size depend on the experience player gain in the game. This is a good thing since many pokemon are too short for their design.
