I want to get into Pokemon but don't know where to start or which ones are the best.

Start with FRLG, then play HGSS, then play Emerald, Platinum, and if it doesn’t do it for you, save yourself the trouble of anything past gen 5. You don’t deserve to start with gen 5 so you should work your way up from 3.

>Heart Gold or Soul Silver
>Emerald
>Platinum
>White/Black
>White 2/Black 2 (you have to play to corrisponding sequel)
Recomended (Not a must but suggested)
>XY
Optional
>Every other title but gen 7 but they are all covered by the six games I listed above
Avoid as death
Sun/Moon/Ultra Sun/Ultra Moon

If you're done with the main series and you wanna try some spinoff:

SM has better plot but USUM has fixes to the features introduced in SM, more Pokemon and better online support
There's no reason to play ORAS, it's an okish remake with less content than the original RSE and it isn't even plot relevant because different people wrote it and there's some alternate timeline shenanigand, if you do come to care for the plot.
There's also no reason to play RGB, GSC, RS and DP. RGB and GSC were remade into FRLG and HGSS, and Emerald and Platinum are the third enhanced versions of RS and DP.

you need to play the games in order in order to understand the subtleties of the series, so
red/blue -> yellow -> Gold/silver -> Crystal -> ruby/sapphire -> emerald -> fireread/leafgreen -> diamond/pearl -> platinum -> X/Y -> SM -> USUM

you can skip BW/BW2 because they are not canon
