The leadup to the totem pokemon needs to be more than just a hallway with some enemies to fight in them. Some gyms were boring and uninventive like that, but they were bad.
If the totem pokemon are going to be double battles, we need to be able to do that too. (U)SM showcased everything that is wrong with single battles with the totem pokemon, as soon as even that slight imbalance was given to the enemy, the game becomes ridiculously imbalanced. Every totem pokemon is either "my one pokemon with the right type and moveset wins the battle effortlessly" or "my well thought out team composition now means nothing and I need to ditch all my good pokemon en lieu of one or two pokemon that can cheese this fight", and there's little to no middle ground.
If they had put gyms on alola they would have suffered from the same problem because GF don't actually know how to design games, they just deign comfy worlds and throw shit into them and sometimes it sticks.
