Let's GO is not a mainline game, it's not even a spinoff of a mainline game. It's a spinoff of GO. The real games are coming out next year and if you deny this then you're obviously a genwunner desperately trying to stay relevant.

Things on the side of them being mainline games:
They are paired games
They are made by gamefreak (the only spin off pokemon game gamefreak has ever made is Pokémon Quest)
They follow the plot and battle system of all the other mainline games of you going around trying to collect badges and become the champion
Masuda and Ishihara call them mainline games

Things on the side of them not being a mainline game:
All other mainline games included all previous pokemon in their game data while this only includes the original 151
The catching system is different
Very likely unable to trade with the other games of it's generation (gen 7)
Might not host VGC unlike all the other most recent mainline games

Every remake has had some sort of unique gimmick to it. Why LGPE would be any different than just games based on older games?

If you call LGPE a spin-off, you may as well call HGSS, ORAS and FRLG spin-offs too.

Technically, not all main series games feature a gym challenge anymore, so I am not sure that's entirely relevant as a criteria at this point.

Masuda and Ishihara also directly referred to XY and SM as core series titles with respect to next year's Gen 8 game(s), so at some point you just have to ask yourself how much their input is still worth at this point.

I think that pushes two of your explicit points to the 'not mainline' camp.

Because they really didn't? They were all normal, modern updates. Altered heavily but faithful. This, however, is an update that cuts out large swaths of the game to retool it into something more like GO. That's more than just a 'gimmick', that's straight up making it a different game.
