Volcarona evolves super late and Shedinja is undead but still chipper as ever.

Just want to point out that a Volcarona is one of the few Pokemon specifically that we've heard of dying in canon.

Well yeah, but remember he's somewhat old and that Volcarona was his starter Pokemon. It lived a damn long time for a bug Pokemon, unless it died when he was very young as well. I forget though, did they mention what it died from?

I get the logic with pokemon like caterpie, weedle, and kricketot as they reach level 10 and are at their final forms, implying they evolve young due to dying rather quickly but how does it apply to other bugs?

Even then I imagine some bugs like shuckle and crustle probably live long with their "slow but consistent" nature.

I think the idea is that real life insects have short lifespans, so Pokemon bug-types would as well.
"Early Evolution" is just being used as a metaphor for that.

Any bug-type that's based off something that's long lived. So yeah Shuckle, Crustle, and any Legendary/Ultra Beast should be fine.
