No more hidden abilities so Garchomp stays in ubers with sand veil bullshit or Espeon won't get magic bounce therefore
Along with no hidden abilities, we also don't get the new abilities from gen 5
Weather wars never happened so the reasoning behind nerfing weathers doesn't happen and we stay stuck in XY-ORAS with infinite weather.
Landorus-T is never released so enjoy seeing physical attackers everywhere, specially mega zard X or better yet, Tapu Koko since Gastrodon is also phased out of existence.
Best pokegirls in the franchise stop existing
No Eviolite or other bunch of items that were introduced in g5

If by "gen V never happened" you mean as skipped, then we probably would have a much better franchise, since what we have left from that gen are either the Pokédex/Movedex/Abilitydex, which are by far the worst in terms of pratically everything, and game mechanics that were mostly abandoned leaving us extrimely salty, plus the bothersome handholding that was carried as far as gen VII.

Power creep would become Yu-Gi-Oh tier.

No hidden abilities, bad 'mons stay bad, good ones stay higher up. UU wouldn't exist anymore, since 90% of it are Unova 'mons. Dragon and fighting type would probably take a bigger hit to Fairy. Fire, Ice, and Psychic are back to having almost no moves.
