Gold/Silver/Crystal, Black/White and 2, Sun/Moon are the only notable ones, the others are rehashes of each other or barren of anything meaningful as far as game design goes
don't fall for the HGSS fad, they harm a lot of the good points of GSC

All the gens have something to offer, honestly. Gen 5 and 4 are my favourites (which is a standard opinion in these parts), but I've enjoyed every mainline game. Gen 6 is probably the weakest overall.

Sun/moon is more unique, ultra s/m more like the others
both are great, though if you play one after the other the differences only come up late in the game and it's kinda lame
also something important, the exp share is the difficulty option in all 3ds games, on is easy, off is hard

I used to say you should always start with the newest games, but with how shitty the 3ds games were, I'd say maybe jump into gen 5.

You CAN jump into USUM, but keep in mind the the story is fucking awful, the pacing is torturous, the difficulty is non existent, and other issues. However, it's also nice to be playing with the most current movesets/mechanics/pokedex/etc.
