No Hold Items were confirmed back at the E3 Demo. There was no "Give Item" option on this screen. Everyone who thought there would be held items were just delusional.

In all seriousness I wouldn't mind them removing IVs but keep EVs since that gives you the sense of actually Training your pokemon

I'm pretty sure natures do exist, the game just doesn't tell you WHAT nature you have. The stat screen indicates a stat highlighted in red and one highlighted in blue, if you do your research you can figure out what nature it is from what stat was increases/decreased. IVs/EVs I have no idea what's happening there.

There are EVs and IVs too. You can give your pokemon candy to increase their EVs. Also the way CP is calculated uses your IVs so IVs are in as well.
