There are no difficult pokemon games.
The only way you can make it somewhat challenging is self imposed rules. Every pokemon game is piss easy if you play normally

Low leveled wild Pokemon combined with limited early Pokemon availability means the AI teams scale better than yours. By the time you get to Claire you are likely way below the curve.
Red is the hardest fight in the series under normal playthrough conditions.

B2W2 postgame trainers have bullshit hacked natures and stat spreads, along with some eugenically perfect Pokemon. Red is hard, but not so hard that you have to know under-the-hood mechanics that the game never explains to beat him.

Colosseum if you aren't grinding, since otherwise your Pokemon will be level ~45 when fighting the final boss who has Pokemon level ~60.

Def USUM is up there. i feel like it was more balanced around having the exp share on.
but yeah, pokemon games arent challenging at all. heck, doing a 1 mon only run is easier than having a full team. one overleveled mon is a bit better than having 6 evenly leveled mons.

USUM is not super difficult, it's just balanced around rotom powers and exp all; there is exactly one actually challenging battle and it's at the ass end of the game.

on a related note: people have been complaining about exp all making pokemon too easy for five fucking years, so I'm glad they did something about it.
