Because "gens" are a fan term, we created it because it fit how the games were launched before, their structure etc, but they don't care. If they change the way they launch the new games, we simply have to create a new term or concept to work with it, not vice-versa.
Imagine if instead of embracing the "shiny" term they created a new kind of pokemon that was called shiny because they shined: we would have to use a new word to describre the old shinies thanks to that. Same here. Either create a new concept: "gen go, gen 1.2, whatever your autism suggests", replace the gen concept or don't bother, but it is not gen 7 because it doesnt suit how we defined gens before
