Should I play SM before USUM (like the case with Gen V) or are they more like Crystal, Emerald and Platinum?

My honest recommendation is to skip gen 7 entirely. You won't be missing much, and you'll have even more new Pokemon to check out with the 8th gen games next year.

Only get USUM if you don't wanna skip this gen though

If you wanna play Alola, just grab SM. Doesn't feel like as much of a dumpster fire, and unlike many others in the series USUMdon't improve much, while bringing in their own issues.

USUM are more akin to Crystal, Emerald, and Platinum - enhanced versions with more features than the originals. Do note that these games are the first "enhanced versions" to introduce entirely new species of Pokemon. 5 Pokemon are available in USUM that aren't in SM. We also have a few USUM-exclusive forms and moves.

I would recommend USUM over SM because it is the "complete" version; SM are incomplete in many ways.
