Maybe that is what they do in the wild to reproduce, and in captivity Ditto don't eat the baby produced from mating so they can't split into two Ditto.

It's just a joke about how Ditto can breed with anything by transforming into it. In this case, two Ditto both did it thinking the other was a real Dartrix. They both figured it out when the baby was a Ditto instead of a Rowlet.

It requires ignoring the fact that two Ditto don't produce a baby Ditto in-game.
