It doesn't matter how many polygons or high res textures you squeeze in to the models, if the art is shit then it will always come out shit.
The 2D models had above all else a coherent aesthetic and proven design concepts at their very base. Each generation's sprites are iconic and I can tell which one they're from at a glance.
