It's mostly the Pokemon that are stoic and reserved that evolve more than once. Bayleef, Pignite, and Quilava had vivid personalities before they evolved, and they haven't evolved since. Sceptile and Greninja had very stoic personalities and evolved more than once. There are a few Pokemon such as Infernape and Torterra that initially had a lot of personality, but their personalities were significantly mellowed out after they evolved in their middle stages, so they count too.
