I'm guessing the Let's Go world takes place in universe where Red and Blue are already established iconic trainers, and Chase and Elaine instead do the journey + with several new twists and elements.

We know Red and Blue are in the game because the Apr 1st leak said we'll be new trainers but that red and blue play a part in the later story

It's a demo you idiot, it's only purpose is to give a taste of the game and give people a few prizes for bothering playing it. Exactly, there is a minimum of four timelines right now at the very least. We've already been blatantly told that the gen 6 games don't take place in the same universe as the gens that came before and have a different history from them, yet they're all still canon.

If GSC is any indiction, there's nothing stopping some other losers from trying to bring Team Rocket (and by extent any other group) back other than another prodigy child coming to stomp them down again.

not for a long while, probably. Now that they've saturated all the pokemon models, they'll probably keep them like that for many years and the saturated overworld to at least have everything making sense. I expect gen 8 to look as bright as LGPE
