As far as mechanically-speaking:
ORAS>XY>SM (haven't played USUM, so not ranking it)

Graphically/aesthetically-speaking:
SM>XY>ORAS (I'd probably rank USUM at the top for adding more details to spruce up Alola, but those should have been there from the start)

Enjoyment/replayability potential:
ORAS>XY>SM/USUM (Gen 7 overall lacks replayability unless you forget about it for a few years; though the problems with the forced story and cutscenes and linearity will remain)

it depends on what you look at.
SM had a nice story and overworld, but screwed up by not having the PSS.

Though they all have their issues.
ORAS is just too damn easy; I'm using a literal team of shitmons and I'm still stomping through the game. Why does Brendan/May heal you on every other route.

USUM (and SM) have boring level design even though their boss battles are fairly engaging. Still, the boring level design makes the games a bitch and a half to replay and I do not feel like replaying through Gen 7 any time soon.

XY has some great QoL changes and nice asthetics, but the games pacing is so out of wack, and the boss battles suck.

Never bought USUM. Not because I didn't like SM, I actually really annoyed them, but the ULTRA CHANGES didn't justify the purchase.

I've also only repayed XY but since I am doing a full series nuzlocke I will be playing them all again, started X last night and honestly it's been really fun. I hate that I can't speed up like on emulator but actually having music to play with is great.

Also my fondest Pokemon memories within recent years was the XY launch, constantly trading friend codes and wonder trading while the Pokedex was limited to only Kalos mons because bank wasn't out. Those days rival the Pokemon Go Summer as the Kino of Pokemon
