Did Ruby and Sapphire have compatibility with Gens I/II at first? Or did Game Freak have to create an entirely new game (FRLG) that were compatible with them? These games are compatible with the titles that they need to be, just like every other. Don't expect Gen VII to be compatible with LGPE, especially when LGPE is not even a competitive title.

Games are designed for the consoles they are played on, but also for the audience. LGPE use the current models with different textures because it is not feasible to create new models when the current ones already serve that purpose. The characters are shown in chibi style to invite younger audience members in; a more realistic style appeals to older audiences. And Kanto being grid-based and blocky, and having basically the same format for each route and town, is meant for nostalgia purposes.

Abilities and held items were deliberately taken away because certain Abilities/held items can create an imbalance. Instead of catching multiple Pokemon to boost your Pokemon's strength over time, or relying on GO to get even stronger Pokemon than before, you rely on a single Pokemon (such as Light Ball Pikachu) as a crutch to clear the game. It defeats the purpose.
