SMT, Digimon, Yokai Watch, Monster Hunter Stories, Dragon Quest Monsters (if you know moonrunes or can emulate/hack for english translations) and Siralim are your only choices, really. GameFreak did a damn good job (unfortunately) of making sure Pokemon has a monopoly on the genre so barely anyone wants to bother making their own monster catching/collecting game unless they've been around longer than GameFreak or can take advantage of a fad.

Or maybe the other games just suck ass because their gameplay is dogshit.
I love the main DQ games but the Monster series are such a fucking chore because all you do is breeding and breeding for stronger monsters since stats are more important than anything and the battles themselves matter so little there's even autocombat.

Seems like all other monster taming RPGs have breeding/fusion as a central mechanic. Their difficulty stems from making the ideal monster rather than the battle itself, like you mentioned. Pokemon is different because it has a much bigger emphasis on the bond you have with your pokemon and breeding is entirely optional. Pokemon games are missing the key component of monster taming games, which is probably why they were never particulary difficult. I don't see it ever being implemented either, since it goes against pokemon's core philosophy of love and friendship.
