Do you honestly want to believe Kukui did the pose for Z move, send Z energy to Incineroar who run and jump on a ring to slam on Mega Aggron before he can fire a flash canon ? Its not Solar beam, the last thing we need is poorly handled battle with plot armor to give Z move attention.
In fact, Z move are probably the main reason why S/M series has poor battles. Its also stupid how most pokemon just stand there and let the move hit them. Like Misty Gyaradoes who could have easily dough it.

If the opponent withstand, dough and counter Z move than Ash will be left with nothing. Plus Z move can be use against only one opponent once in the battle while Mega evolved pokemon can be used for the whole battle. You can sweep an entire team with Mega evolved pokemon.

No matter many time animator forced Mega evolved pokemon to lose to Z move, it still be inferior. The end results would be poorly handled boring battle.
