Probably. The Eevee was shown off in the recent ending along with the main cast's Pokemon. Since it is Eevee, makes sense for Ash to catch it. Only there to market LGPE to the casualfags.

If Ash indeed does catch it, this is what will happen. Any time Ash catches a pokémon that has previously been featured, said capture eventually evolves into a pokémon introduced in the most recent Generation.

At least it won't evolve any time soon, if it is captured and does have a new evolution in Gen 8, it will most definitely evolve closer to Gen 8

If Ash catches the Eevee, it is going to stay as an Eevee. Ash is only catching the Eevee because of LGPE marketing. Ash already has the Pikachu, but nobody on the main cast has an Eevee right now, so they're giving one to him with a LGPE hairstyle to boot. That Eevee is going to be like Pikachu: a variant Pokemon that can learn special moves and won't ever evolve. This isn't like Aipom, which was shoehorned into AG for Ambipom.

Except to show off/tease any potential Gen VIII Eevelution around announce/reveal time next year of course. I get it's showing up for LGEP tie-in. I think Ash is going to have another Charizard type of scenario where Incineroar doesn't listen to him and he's worried about it and then there will be another little arc of Ash thinking he's not good enough to be its trainer blah blah blah, ultimately Ash's Incineroar beats Masked Royal's thus it starts obeying Ash.

It's the Evolution Pokemon....

Ash getting it means more than just LGPE promo, they can give it to any of the cast for that, but it's (Likely) Ash getting it meaning it will eventually evolve, it's going to act as LGPE promo then as that dies down and gets closer to Gen 8 release, obviously they'll use it to shill a new eeveelution.

At most Eevee will show off an overworld technique or two, but seeing as SM is nominally based on the Gen VII games, I don't think they're going to throw moves they won't be carrying forward to Gen VIII into anime!Eevee's moveset.
