I love some of the single stage mons, and even enjoyed using Komala recently, but evolving gives the stat boosts and evolving twice is the fruit of your hard work throughout the game. Not just having the same mon with better moves.
The fact that some mons become drastically more useful upon reaching their final evolution is the icing on the cake. Togekiss is a particularly notable example. Togepi is bad, Togetic is eh, then Togekiss comes along and gets a fucking massive stat and movepool boost.
It's kind of disappointing that Gens 6 and 7 don't have many 3 stage lines.
