It does so much and it's even based off a real life location! The fact that it ties the whole region together is something i wish would be used more often.
Without sounding like a kantofag, the only other region that makes you go back through central locations constantly is literally kanto. Saffron functions in the same way as Mt Coronet but often in indirect ways.
Such as the underground tunnels, the obtaining of the tea, and in gen two it gets more flavor by being a train station too! Mt Coronet does the same thing but better.
It's literally in the intro video, it's the final destination of the plot, it even hosts an event (arceus) for more flavor. It simply cannot be understated how important it is for world building too.
You pass through it constantly as you travel through sinnoh and the huge, looming mountain is always within sight. Constantly being part of your adventure, both being a mystery and a motivation.
With the surrounding towns speaking of legends from the mountain, you have this slow buildup of lore from unique perspectives all over the region.
You got puzzles, dungeons, a variety of environments (internal lake, external snowcaps, cave labyrinths) and it's just absolutely packed with content. I've never seen a location be used so well to bring a world together like Mt Coronet.
