I actually suspect that the only reason her localized figure called her Leaf is because Bulbapedo shilled that name so hard that whoever was in charge of figuring out her name likely just hopped over to see what she was called in the west, and went with that.
Official Devs when asked have just said that she has no name because players could name her whatever they wanted. Because she wasn't canon, she never previously had a named NPC to interact with either, so they never bothered to name her.
So most likely, she'll be called Green (Blue in JP) in Let's Go because Game Freak sure as shit isn't going to check the worldwide fan-name for her. What the localization team decides however, is another story. They might go with what "the community" has already decided and call her Leaf anyways. But hopefully they wont, so we can see Bulbapedo squirm and try BS an explanation for keeping her called Leaf on the wiki.
