Second, the whole Red association with Charizard comes mainly from fact the Red version was the only one consistently released around the world, instead of being a Japan only thing like the Green version. The name change also helped, because now Red and Blue name's corresponded with their starters instead of being opposites.
The Charizard and Blastoise duality was reinforced with the anime, where they were Ash's and Gary's aces respectively. And before you say the anime has nothing to do with the games, yes it does, there you have Pikachu as the absolute mascot and Red's unquestionable signature Pokémon. Also, the Charizard-Blastoise rivalry isn't exclusive to them, you have the Alain vs Siebold special and Tierno and Trevor too. Plus you have the whole thing of water and fire being natural opposites instead of a less orthodox fire vs grass to portray in media.
Now, to Pokémon Let's Go. Adding Green to the game meant they now could distribute the 3 starters between them and as the ultimate nostalgic throwback they went with Red having the #001 Pokémon coinciding again with the original Red and Green versions, and as a Charizard fag I don't mind it at all.
What you guys should be wondering is if we will ever see an adaptation were Blastoise is Red's single ace.
