Those games have simplified mechanics, whereas Sun and Moon have a battle system with over 20 years of of additional complexities slathered on top of it. If you don't want to pay $60, try Red / Blue or Gold / Silver / Crystal on the 3DS e-Shop. After you get acquainted with the mechanics, Emerald, Platinum, and Black 2 / White 2 are probably the best overall titles.
The games ultimately boil down to being a highly stragetic experience with a small degree of random chance. Assuming you have have a good head for multiples, you can estimate relative damage outputs pretty easily. There's the overworld exploration angle, although some would argue that element has degraded in recent titles. There's also a pretty vibrant online competitive scene, which can extend the value of your games if you're into that sort of thing, but there are also good online simulators.
Best piece of advice for beginners would be to watch Type matchups. Make sure your attacks are strong against your opponents, and try to use Pokemon that may resist the attacks of your foes whenever possible. That'll carry you through 95% of the game, especially during the single-player campaign.
