First, you only unlocked them after beating the champion, and if you restarted your game you no longer had access to them. That means in order to actually play either mode at all you had to have two systems and two games, one post-champion with the mode you wanted to play on (since the modes were each restricted to one game or the other) and another with a fresh save.
Second, the curved exp system and way they set up trainer battles actually made the two modes complete opposites of what they were supposed to be. In Challenge Mode the boosted levels of NPC trainers gave you more exp, while in Easy Mode the reduced levels of trainers gave you less and kept you from leveling up without grinding. And the real kicker was that in Easy Mode, even though the levels of the NPCs were lower, the stats on NPC trainers' Pokemon weren't changed from normal gameplay. So you were facing Pokemon just as strong as they were normally, but with less exp to show for it.
