Is it possible to obtain EVERY Pokemon so far with just these 3 games? (excluding event pokemon like Mew, Marshadow, Celebi etc. of course)

No, you need LGPE and Go for Meltan and Melmetal.

Yes, XY and ORAS will get you all pokemon existing at that point during Gen 6, minus mythicals.

For Gen 7 you probably need all four, pic related. I think you can get all Alolamons with just SM iirc, minus the 5 introduced in USUM.

Now we have Meltan and Melmetal

The best feature about Gen 6 is that they made it really easy to fill in a living dex.

Of course Gen 7 had to screw that, even when they fucking introduced alternate universes that could easily have caterpie residing in the same area as a hydreigon

Since LGPE cannot interact with main series games, we can consider those two pokemon to effectively be generation 8 for the purposes of generating a living dex.
