-You have the same skills you did IRL
-You can choose to become a pokemon trainer or a similar job to what you have now
-You can also pick to live in any town/city in the PokeWorld

Pokemon trainer
- 3-6 pokemon
- team is based on survival (fly, surf, fire, etc)

Day Job + Pokemon owner
- 1-3 pokemon
- choices are based on your own preference and job

Wouldn't mind delivering mail in the pokeworld! Walk the routes, wave to my regular customers and keep a lot of max repels handy. Delibird and Machoke would be my coworkers, and a random shiny Rattata shouldermon I picked up on my my first day and nicknamed 'Lucky'.

If I was a trainer though, I would definitely be a Rocket... hehe... Alolan Rattata, Weezing, Arbok, Drowzee, Sandshrew and Tangela would be the operating crew.

There are several Pokémon worlds. Ultra Sun and Ultra Moon confirm this with the existence of Ultra Space and the wormholes leading to them.
There are also alternative Pokémon worlds in the non-mainline games, such as Ranger, Conquest, and Mystery Dungeon.
That's not even mentioning the official non-game media, such as the animated cartoon, the various comic book series, and even the upcoming live action movie.
I ask again: who do you think you are talking to right now?

You must be arguing with OP, then, because OP said "the" Pokemon world, which means they think there is only one.

For all versions of the Pokemon world, you are at the mercy of it's creators. Even for the anime, you are being controlled by the writers, and unless you're Ash or Team Rocket, you're only going to exist for a short amount of time and then disappear from existence. And with the exception of Tracey and Max, unless you're a character from the games, you're not going to last for even an entire generation. You still cannot choose what you do. The manga will not change that either. For all other games, you are either the PC or an NPC, and the relationship is the same as it is for the main series. You are never the one in control unless you are the player character, and even then, you are privy to the role you must play. You can never do anything else.

I manage a small coffee shop now so here would be my ideal team:

Mr. Mime could probably handle the shop on his own if I needed to leave and would be a good pokemon to work with.

Simisear would be great to help with steaming milk and making water hot enough for tea and making baked goods.

Porygon 2 because my organization isn't that great and they could probably help me out with staying organized with computer programs.

Yeah I was thinking Togekiss would come in on Fridays. Everyone's in a good mood because it's almost the weekend so Togekiss would cheer people up even more.

I just started so I don't know the best way to explain it, but I do stuff with data and software, is a good way to put it.

Also I daydream about pokemon sometimes, like movesets for mons to train up or new fakemon ideas. What if pokemon was real sometimes. Other than that, just dumb stuff that makes me laugh. What I would do if I won the lottery.

I'm a paramedic IRL, wouldn't mind continuing to do that. There'd definitely be a need for them, just imagine the kinds of fucked up accidents that can happen in a world where common fauna have superpowers.
My partner pokemon would be an Audino, considering they have access to stuff like Heal Bell and Heal Pulse and, according to the pokedex, can assess someone's condition with their feelers. Plus, they're very cute; there's something to be said for a calming presence. Other than that I'd just live simply, find a nice girl, have a handful of personal pokemon and maybe battle casually with them.
