My dream route is a real highway stuffed to the brim with trainers and hazards that encourage you to take trails and other side routes through dense pokémon habitats and interesting hidden/unmarked areas with a mix of overworld and random encounters depending on what model makes the most sense, some of which are certainly avoidable if you are sneaky enough, have enough repels or have a strong enough team.
I hardly care for big flat empty spaces either, which is part of the reason I dislike random encounters to begin with because it just makes routes and dungeons feel more empty and lifeless as the sparse fields of nothingness you're talking about do as well.
