Ivy owns the restaurant that doubles as the gym, but rather than sit in the back and let others do the work for her, she works as a waitress as well.
When the player enters the gym, they'll have to choose their courses, with each one having different trainers. For example, the pumpkin soup has a Gourgeist trainer, while the mushroom stew has Parasect. Ivy acts as the waitress who takes the orders and brings out the trainers, with the gym leader acting as the dessert.
