So my autism demands that I beat all the Master Trainers. However, I’m not autistic enough to grind shitmons to ridiculously high levels. What’s the alternative? Chaining encounters to get candies from them?

Yes.
For rare Pokemon however, you may want to Chansey Chain for quick levels instead because Chansey is the most common of the rare Pokemon, and that's a better alternative than trying to catch 50+ Shitmonchans/Shitmonlees

Train up to level 70 and give 50 species candy, depending on their strategy it should be fine. My level 75 shiny adamant Rhydon with +200 AV in all stats lost the first time because it used Horn Drill first turn and despite my stats I couldn’t OHKO with Earthquake.
