The battles were all improved, with every NPC having an updated team (thanks to the new Pokédex), and especially the Totems and major NPC boss fights were actually the best battles in the series by far (with the exception of Ultra Necrozma, which just relies on sheer numbers and type coverage, most of them actually had strategic movesets with clever effects and good synergy with their allies; boss Trainers now also have EVs for the first time in the series).
As mentioned, I personally enjoyed Ultra Warp Ride, though it wasn't without its faults.
There were a TON of new optional scenes and sidequests added, which were actually the best improvement of the game for me - if you're the kind of player who only goes where the story takes you, this isn't going to benefit you much, but if you like exploring and talking to every NPC, there actually is a significant amount of fun to be had in all of the little scenes and small sidequests that were added in.
Poipole and Naganadel are my second favorite UB line, so there's sort of that.
I would argue that USUM would have been better without any of the changes they made to the main story, but at least some of the side content did its job well. It's really up to what you were looking to get out of the experience.
To be honest, my personal opinion was on the negative side overall - I think you got everything you'll need out of Gen VII with just Sun and Moon - but I encourage you to do your research and see what you think. As many cons as I pointed out, it may not be quite as bad as people make it out to be - it just also isn't what most people were looking for, and it's entirely possible that that includes you, so think it through and figure out what you want out of it and what it's going to deliver before you go ahead and buy it!
