May was the very first time they had the female lead of the game to use at the start of a gen, so they took it. And Contests originated in Hoenn so it made sense to have her do them. Then with Dawn they basically made the decision to do the same thing again.

BW was trying to be a semi-reboot so Iris and Cilan were chosen to mimic the Misty/Brock dynamic with Ash. And Hilda was screwed over.

Serena was basically going back to the May/Dawn dynamic just with a love interest.

And then in SM they probably figured making Lillie and all the trial leader girls mains they had no reason to use the SM female lead

Randomly based on region.
Misty was really only there because she was basically the only girl, May because new region and there really wasn't another gym leader, Dawn they decided to copy May, Iris was picked because of the semi-reboot, Serena really because it was her or Shauna, SM they just used all the girls because they're around Ash's age, in some sense.

One of the few unused models in SM was the gym icon... combining with the information of Masuda admitting that trials were a last minute addition, I'd say Gyms are too iconic to be gone for good.

They just pick girls who are sufficiently relevant as NPCs in the games. Leaf, Hilda, Rosa and Selene either had very minor NPC roles or never appeared at all if you picked the male option. May, Dawn, Lyra and Serena on the other hand acted as friends/rivals if you played as the guy, so that was reflected in their anime roles.

This never happened

The idea was planned from the beginning, actually programming them was last minute, which is why Ohmori had to use pre-existing mechanics for them. USUM actually had time to flesh them out.

put the girls aside, how do the writers determine what Pokemon Ash gets every region??? Johto and Unova were massive blunders in those regards.

Varies depending on the travel companions. Johto and Unova Ash to get the three starters, but generally Ash is given Pokemon that are for the most part cool or have cool evolutions even if they're cute. Like in Unova he had to get the starters, but they also gave him stuff like Krookodile with sunglasses for added cool. Usually he's also given regional birds because it's the first thing he and players encounter.

To fit with Ash's battle style, he usually gets the typical "frail, but fast, sweeper" starter (see: Sceptile, Infernape, Greninja). Then the regional bird (Alola omitted, as Rowlet fit the role of his bird), and then finally anything that looks cool.

Takeshi Shudo made the decision for Misty to leave after Johto. If Misty had actually continued into Hoenn I'm not sure if May would have been made a main character.
