And Hinduism can literally be defined under any religious category, probably even atheism if you try hard enough. But mainstream Hindu is closer to monotheism, for the same reason you don't toss Christianity under polytheism.
As for Pokemon, comparison to Shinto makes sense as their are a few major deities (Shin), mostly of the creator sort, and then a bajillion minor ones (Kami). Actually calling Kami deities is a bit of a stretch considering they're closer to nature spirits, that'd be like calling the Erinyes, Nymphs, Valkyries, or Angels as deities.
