He's a guy who'll do anything to get his way for a good cause, despite the current consequences being dangerous. He's willing to kill to save lives, though thankfully he never got to go that far. A lot of his actions also seem carefully planned out, while also being a little rushed, emotional and arguably stupid, which fits since a lot of the "save the world" plan is a group effort. Finding the Time Gears through protag seems to be a combined effort, but when he's on his own, stealing the Gears and being labeled a thief is more desparate than careful, and it fits, because he lost his partner and needs to get that done.
Special Episode Grovyle, on the other hand, spends a lot of his time wearing his heart on his sleeve, even to people he wouldn't trust normally. It leaves him open to being betrayed, but the huge compassion boost also makes him able to sway other people's hearts. He's far less cold, and I'm not entirely sure if it was an intentional case of development (him realizing that being cold and brooding was a horrible idea) or him just being wishy-washy, considering the nature of them being in the future.
In any case, the difference he faces in the main story and in the Special Episode is big enough to be grouped separately, really, whether it's a change in development or just strange writing differences, after all, Sky and the SEs came out well after Time and Darkness, the main plot did.
