Red has Charizard, Blastoise, and Venosaur because the player receives those pokemon in Yellow. The Red-style team should have the most popular starter from their gen pokemon that are given to the player or must be encountered for the plot to progress, and Pokemon that represent their region well.
That being said, Gold/Ethan would have this team. He would have Typhlosion because it is equallly popular as Feraligatr, who fits Silver's team of "bad guy" 'mons, leaving Typhlosion to Gold/Ethan. Sudowoodo, Togepi, and the Extremespeed Dratini are encountered/given to the player. Donphan and Heracross were iconic Gen II Pokemon, and Umbreon is both a mirror to Red's Espeon and representative of the gen's new Dark type.
