Genes determine sex. 99% of sexually reproducing vertebrates fall into two categories, male or female, the remainder fall into a third category, hermaphrodites. Then there are plants which also usually only have one or two sexes, Ginkgos being the last of the trees to have two sexes, as other trees now have both male and female sexual organs. Invertebrates get weird, there are some species with several sexes. There are no true asexual animals, but there are animals that can reproduce asexually, mostly through budding.
