Something like a little tree that walks about on it's roots. And when it gets to the final evo it's a giant Oak that can't move about anymore so it has to teleport itself around.
Or a grass/rock statue with ivy growing around it, and as the evolutions progress the ivy swallows up the statue part more and more
Or a Venus Fly Trap that grows more 'mouths' until it resembles a medusa type thing
