to be fair, those games are as good as you can get, the random dungeons make sure you can do it over and over, no real need for a fan redo.

now, I wouldn't mind a new one on switch alongside the next gen

The closest thing you can get is one of the Pokemon Ruby Destiny ROM hack, and even then, it starts straying from the MD path later on and start leaning more on the Ruby Destiny series itself.
