One of the reasons people like gen 1 more is because of their saturation. Many, no, not many, but all of gen 1 pokemon have a low-tone saturation, their colors aren't very jazzy, and they mostly have a white tone if you go here and scroll down, you'll see that the colors get more jazzy as it goes down, and with a higher saturation.
