When she went into hospital she and her husband probably knew that this was it and she wouldn't be coming back home this time. The problem was that nobody told Mallow this, most likely because they wanted her final memories of her mother to be happy without the devastating knowledge that she was about to die looming over them. It's just unfortunate that Mallow lost her temper at her mother saying sorry (Mallow had already told her earlier that she was sick of hearing her apologise all the time because she didn't need to apologise since she couldn't help being sick) one too many times when she did.
