I never finished Sun/Moon. I just couldn't get into it, and I found it a flawed experience. Is Ultra Sun/Moon enough of an improvement to be worth trying out? Or should I just go back to Platinum?

Not true. I disliked Sun, got Ultra Moon, and seeing the story a little more fleshed out is pretty nice. Also they increased the encounter rates for some Alolan pokemon, like Bruxish, so it's less ridiculous. I'm doing an all gen 7 team and was surprised the first 3 islands weren't as annoying as I'd remembered-- they actually kinda flew by.

You have the Rainbow Rocket episode and then the ultra wormholes where you can go and catch almost every legendary in the series. I'd say the post game is pretty similar to ORAS in that regard.

usum are better than sm in terms of postgame content and plot, but gen VII overall is pretty shit, so i'd say go back to platinum

No, not at all, it's just sun and moon but with slight improvements and some different end game events, and some different/more pokemon available. Other than that it plays exactly the same. Frankly, if if it was the only gen 7 game we got it'd be fine, but being released as it's own separate two version release, it's just insulting that it exists.
