With 3D models, two massive problems appear:
1. How static and lifeless the models are, a.k.a. "soulless" meme.
2. How static and lifeless the battles are, a.k.a. "soulless" meme.
The amount of work required to make these Pokémon (over 800 of them) and battles (don't know how many combinations of fights there are) full of life (and thus genuinely an improvement over sprites) would be gargantuan. As in, "don't fucking expect it from the makers of Pokemon: Let's go!".
Going back to sprites is objectively:
1. The fastest solution.
2. The cheapest solution.
3. The realistic solution.
Again, not because I'm saying "Game Freak is lazy, never going to happen". Rather, because Game Freak is not only lazy, but the amount of work it would require them to do would dwarf pretty much every videogame ever made.
