So how many Pokemon you want revealed before the games come out? All? None? Half? Just the starters and legendaries?

Why would I want to know everything I could discover in the game beforehand? I intentionally ignored everything to do with gen 7 for 2 years until I finally had the time to play it and it was a great experience, much better than if I had watched all the trailers and leaks.

No more than half. Every one of them shown there should be one that isn't. Same for locations, story events, and other characters.

And this includes implied characters. Showingthe starters should mean there are by default 9 they won't ever show, in other words, even if they were to never show the evolutions.
