to be honest, there are plenty of good fire/water pokemon in every game so getting a fire/water starter is sort of pointless
meanwhile grass pokemon usually are lacking (yet play a valuable team role) so the grass starter is often the most powerful option for a grass mon on your team

Roughly half of the pokedex is water types but for example DP Sinnoh gets exactly two fire types and one of them is the starter.

Grass starter people complain about their uniqueness for the sake of uniqueness and try to propel up shitty evidence.

Grass- Those who play tactically, using a lot of status moves to weaken their opponents.
Fire- Those who use brute force, all four moves are offensive. No status moves in sight.
Water- Those who use both status and brute force, but are t particularly great at either.

Fire seems about right, it is all about hitting hard and trying to build oneself up to be able to hit hard so usually you have two or three physical or special offensive moves, and the rest helps boost their strength.

Water, I want to imagine is more defense oriented, but they tend to use terrain advantages to their benefit. Then again, it is hard at times to state for certain that they are all like that since it can be one of the more eclectic types.

Grass is all about status, weakening the foe, or just enduring threats. Grass type moves tend to not be very effective, so it is common for them to find alternative ways to taking down threats. Some might even be team supporters if they can't do the weakening aspect of things. Having moves like Aromatherapy, Leech Seed, or whatever they can throw out to help the team out.

Most games have a serious lack of Fire types, especially early on. In comparison, you're prwctucally guaranteed to find another Water or Grass before the third or even second gym.
