There are no official statements about the Pokemon pantheon, just a handful of NPCs referring to vague legends. The anime isn't canon, and Pokedex entries should be taken with a grain of salt.

The pokedex doesn't have a way for you to manually impute data. It unlocks as you meet new pokemon. This means the professor has all the info on all the pokemon already before you even start your adventure and has it built into the dex.
