Probably Staraptor. I never caught any shinies in Crystal, then in Sapphire I caught two I didn’t care much for (Wurmple and Torkoal), and then in Diamond, I foujd a shiny Staravia in the Trophy Garden. When I evolved it and saw that blue crest, it was over, I was in love.
Honorable mention to shiny Umbreon and Pelipper.

I actually hate normal Garchomp compared to the shiny one. At least when they're shown next to each other. Never seen a shiny one in game so can't say if I'd notice it really but when they're shown next to each other I just can't stand the normal one. Something about his shade of red and how it goes with that blue pisses me off
