Alolan raichu was great, A-exeggutor was a fun silly design, pyukumuku is based as hell, Mareanie line is great, both lycanrocs and rockruff, lurantis line, the first and second stage starters, null and silvally, galisopod line, komala, minior, salazzle line, and passimian are all pokemon I really like that I can name off the top of my head. Presented with the dex, more would probably stand out.
The main reason these pokemon feel 'overdesigned' compared to older pokemon is because they're made for a 3D environment. In 2D, yeah, they're cluttered, but as 3D models, they feel more complete and suited to such a medium. Try playing with some of them in refresh, you'll like them more.
