So what can we tell from the designs about potential final evolutions/additional types?

Maybe grass/fighting? What type would the stealth element even be? The rabbit is clearly meant to be a speedy character...

We already know the rabbit will be a rocket based fire steel.

The monkey will have a really strong sound and perhaps even caveman theme I am sure. Not sure what secondary typing.

The chameleon I honestly couldn't tell u and that excites me.

The monkey is banging on a rock to grow the grass back. Either Grass/Rock or Grass/Fighting. Possibly a musician, maybe a cricket player.

Scorbunny is running along a steel gear. Possibly Fire/Steel. Could be Fire/Fighting with its kicks.

The water is very obviously a timid water/ghost dragon that hides.

My guess for Grookey is rock, because someone mentioned in another thread he hit a rock with his stick and it made the grass grow or some shit so he could be music themed

Sobble is my favourite of the three so far and I get poison vibes from his design, but also maybe electric because of his cheeks and yellow fin. Vaporeon is pure water and can "melt" into the water to become invisible so maybe he's pure water

Honestly I'd appreciate a gen of pure types like gen two had

We had 2 Mega Evolved dragons. Dragon is nowhere as powerful offensively or defensively as it used to be. We can have a Dragon-type evolution for real.

The starter type triangle doesn't matter at the third stage. You already have Pokemon that are super-effective against the secondary typings b that point.
